ZUCCHINI OATMEAL COOKIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Jarvis Estate in Frisco, Texas in 2007.

Ingredients
  • 1/2 cup butter
  • 3/4 cup honey
  • 1 egg
  • 2 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup grated zucchini
  • 1 cup rolled oats
  • 1 cup raisins

Directions
  1. Cream butter with honey then add egg and beat well.
  2. Sift flour, soda, cinnamon, cloves, nutmeg and salt.
  3. Add flour mixture alternately with zucchini to egg mixture then stir in oats and raisins.
  4. Drop by teaspoons onto greased baking sheets then bake at 375 for 12 minutes.
