White Chocolate Cranberry Bars Recipe
WHITE CHOCOLATE CRANBERRY BARS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Monroe Estate in Stephenville, Texas in 1982.

Ingredients
  • 2-1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup coarsely chopped frozen cranberries
  • 1 cup chopped walnuts
  • 12 ounce package white vanilla chips
  • 1 tablespoon shortening

Directions
  1. Heat oven to 350 then grease rectangular baking pan.
  2. In large bowl combine flour, baking powder, baking soda and salt then mix well.
  3. In another large bowl combine brown sugar, sugar and butter then beat until light and fluffy.
  4. Add eggs 1 at a time beating well after each addition then add vanilla and blend well.
  5. Gradually add flour mixture then blend at low speed just until combined.
  6. Fold in cranberries, walnuts and 1-1/2 cups vanilla chips.
  7. Spread batter in greased pan and bake at 350 for 30 minutes.
  8. In small saucepan over low heat melt reserved vanilla chips and shortening stirring occasionally.
  9. Drizzle over warm bars then cool 1 hour then cut into bars.
