Fiddlehead Fern Soup

- 3 tbs. unsalted butter shopping list
- 1 medium onion shopping list
- 2-1/2 c. of chicken stock shopping list
- 3/4 c. dry white wine shopping list
- 1/2 lb. fiddlehead ferns shopping list
- 1 cup half and half shopping list
- 1 cup heavy or whipping cream shopping list
- 1/2 tsp. ground nutmeg shopping list
- 2 Tbs. lemon juice shopping list
- Salt and pepper to taste shopping list
- 6 Tbs. butter shopping list
- 3/4 cup flour shopping list
- 1 stick butter, optional shopping list
How to make it
- First add 3 tbs. of unsalted butter in pot.
- Saute the onion approx 3 min..
- Add 2-1/2 c. of chicken stock and 3/4 cup of dry white wine this mixture.
- Now Add 1/2 lb. of fiddlehead fern to pot and simmer 20 min.
- Now remove it from the flame and cool.
- Then add 1 c. ofhalf and half, 1 c. of heavy or whipping cream, 2 tbsp. of lemon juice, 1/2 tsp. of ground nutmeg and a dash of salt and pepper.
- Now place this mixture in the blender and puree.
- Then return soup to stock pot and heat it up.
- For creamier soup, make a roux out of 6 tbsp. of butter and 3/4 c. of flour. Whisk the butter and flour together in a skillet then add to soup.
- Serve!
