Ingredients
  • 3 tbs. unsalted butter
  • 1 medium onion
  • 2-1/2 c. of chicken stock
  • 3/4 c. dry white wine
  • 1/2 lb. fiddlehead ferns
  • 1 cup half and half
  • 1 cup heavy or whipping cream
  • 1/2 tsp. ground nutmeg
  • 2 Tbs. lemon juice
  • Salt and pepper to taste
  • 6 Tbs. butter
  • 3/4 cup flour
  • 1 stick butter, optional

Directions
  1. First add 3 tbs. of unsalted butter in pot.
  2. Saute the onion approx 3 min..
  3. Add 2-1/2 c. of chicken stock and 3/4 cup of dry white wine this mixture.
  4. Now Add 1/2 lb. of fiddlehead fern to pot and simmer 20 min.
  5. Now remove it from the flame and cool.
  6. Then add 1 c. ofhalf and half, 1 c. of heavy or whipping cream, 2 tbsp. of lemon juice, 1/2 tsp. of ground nutmeg and a dash of salt and pepper.
  7. Now place this mixture in the blender and puree.
  8. Then return soup to stock pot and heat it up.
  9. For creamier soup, make a roux out of 6 tbsp. of butter and 3/4 c. of flour. Whisk the butter and flour together in a skillet then add to soup.
  10. Serve!
