A quick, easy couscous salad that can be used as either a side dish or light lunch. The crunch from the bell pepper and walnuts mixed in the couscous with cumin, lime, and sweet raisons makes this salad unique and oh so tasty.

Ingredients
  • 1 cup uncooked couscous
  • 1/4 cup raisins
  • 1/4 cup walnuts, chopped
  • 1 1/4 cups chicken broth
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon ground cumin
  • 8 green onions, chopped
  • 1 (red) bell pepper, seeded and chopped
  • 1/4 cup fresh cilantro or mint, finely chopped
  • Salt & pepper

Directions
  1. Bring chicken broth to a boil in a large sauce pan and stir in the couscous and raisins.
  2. Cover the pot, remove from heat, and let stand for 5 minutes.
  3. In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin.
  4. Add green onions, red pepper, cilantro, and walnuts, and toss to coat.
  5. Fluff the couscous well, breaking up any chunks, then add to the bowl with the vegetables and mix well.
  6. Season with salt and pepper to taste and serve at once or refrigerate until ready to serve.
