Carrot Raisin Spice Cake With Cream Cheese Frosting

- 2 cups sifted flour shopping list
- 1 tablespoon ground cinnamon shopping list
- 2 teaspoons baking soda shopping list
- 1/2 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 cup granulated sugar shopping list
- 1 cup packed brown sugar shopping list
- 1 cup vegetable oil shopping list
- 1 tablespoon vanilla shopping list
- 3 eggs shopping list
- 2 cups shredded carrots shopping list
- 1 cup chopped pecans shopping list
- 1/4 cup raisins shopping list
- Cream Cheese Frosting: shopping list
- 8 ounces cream cheese softened shopping list
- 1/4 cup butter melted shopping list
- 1 teaspoon vanilla shopping list
- 16 ounces powdered sugar shopping list
How to make it
- In large bowl sifter together flour, cinnamon, soda, powder and salt then set aside.
- In another bowl using mixer beat sugar, brown sugar, oil, vanilla and eggs until well blended.
- Reduce speed to low and beat in dry ingredients, carrots, raisins and pecans.
- Spread batter in greased rectangular baking pan and bake at 350 for 45 minutes.
- Cool completely in pan on rack then when cool cover with frosting.
- To make frosting combine cream cheese, butter, vanilla and sugar and blend well until creamy.
