Easy Pumpkin Cookies Recipe

Ingredients

2 cups flour

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup shortening

1 cup white sugar

1 cup pumpkin

1 egg

1 teaspoon vanilla

Frosting ingredients:

3 Tbs butter

1/2 cup brown sugar

4 Tbs milk

1 tsp vanilla

Directions

Combine sugar and shortening... add pumpkin and egg

beat well

Combine flour, baking powder, soda, cinnamon and salt

Add to pumpkin mixture

Mix well

Bake at 350 for 10-12 minutes

Frosting:

Heat ingredients to boiling and boil 2 minutes unctil thickened

Let cool then add enough powdered sugar to make stiff enough to spread on cookies.

These freeze great too!
