Easy Pumpkin Cookies Recipe

How to make it

  • Combine sugar and shortening... add pumpkin and egg
  • beat well
  • Combine flour, baking powder, soda, cinnamon and salt
  • Add to pumpkin mixture
  • Mix well
  • Bake at 350 for 10-12 minutes
  • Frosting:
  • Heat ingredients to boiling and boil 2 minutes unctil thickened
  • Let cool then add enough powdered sugar to make stiff enough to spread on cookies.
  • These freeze great too!
