How to make it

  • Cut up haloumi into 1cm cubes. Toss in the oil and spices.
  • Cook onion and garlic in a medium saucepan til soft.
  • Add the haloumi and curry leaves and cook until haloumi is golden.
  • Add tomatoes and chili flakes and bring to boil. Simmer to thicken slightly.
  • Top with natural yoghurt and chutney, sprinkle with coriander and serve with naan bread to sop uo the juice.
