Indian Spiced Haloumi Recipe

Ingredients

200g (approx) haloumi cheese

1 Tbsp oil

½ tsp paprika

½ tsp turmeric

½ tsp garam masala

½ tsp cumin

½ tsp ground coriander

1 brown onion, sliced

1 clove garlic, crushed

5 fresh curry leaves

1 can chopped tomatoes

¼ tsp chili flakes

coriander, chutney, yoghurt and naan bread to serve. (if you want)

Directions

Cut up haloumi into 1cm cubes. Toss in the oil and spices.

Cook onion and garlic in a medium saucepan til soft.

Add the haloumi and curry leaves and cook until haloumi is golden.

Add tomatoes and chili flakes and bring to boil. Simmer to thicken slightly.

Top with natural yoghurt and chutney, sprinkle with coriander and serve with naan bread to sop uo the juice.
