Chicken Salad Veronique

- 1 1/2 pounds skin-on, bone-in chicken breasts shopping list
- 3/4 finely chopped celery shopping list
- 1/4 cup finely chopped sweet onion shopping list
- 4 scallions, thinly sliced shopping list
- 3/4 cup halved green grapes shopping list
- 1/4 cup chopped walnuts shopping list
- 1/4 cup chopped fresh tarragon shopping list
- 1/3 cup mayonnaise shopping list
- salt & pepper, to taste shopping list
How to make it
- Heat grill. Salt and pepper chicken breasts. Grill about 20-30 minutes until skin is crisp and meat is no longer pink, set aside.
- Meanwhile, in a large bowl, add chopped celery, onion, scallions and grapes. Combine.
- When chicken is cool enough to handle, peel off skin, remove meat from bone and chop into 1 inch cubes. Add to celery mixture.
- Add mayonnaise and stir to coat evenly. Add tarragon and walnuts and gently toss once again.
