White Christmas is a popular treat at Christmas time in Australia.

Ingredients
  • 3 cups rice bubbles
  • 1 cup mixed dried fruit including glace cherries
  • 1 cup icing sugar
  • 1 cup coconut
  • 3/4 cup milk powder
  • 225g copha (white vegetable shortening)
  • 1 teaspoon vanilla

Directions
  1. Melt copha in a saucepan over a medium heat.
  2. Mix dry ingredients together.
  3. Add melted copha and vanilla to dry ingredients and stir well.
  4. Press into a lamington/slice tin or spoon into individual patty pans.
  5. Refrigerate until firm.
