No Bake Lemon Cheesecake Recipe
This cheesecake is smooth and creamy with a light lemon flavour.

Ingredients
  • 250g sweet biscuit crumbs
  • 175g butter, melted
  • 500g cream cheese, softened
  • 400g can sweetened condensed milk
  • 300ml thickened cream
  • 3 teaspoons gelatine, dissolved in 1/4 cup boiling water
  • 1/4 cup lemon juice

Directions
  1. Combine biscuit crumbs and butter and press into the base of a 25cm springform pan. Refrigerate.
  2. Beat Cream cheese using an electric mixer until smooth. Beat in condensed milk, cream and gelatine mixture until smooth, then add lemon juice and beat until combined.
  3. Pour mixture into prepared base and refrigerate 3 hours or overnight.
