No Bake Lemon Cheesecake

- 250g sweet biscuit crumbs shopping list
- 175g butter, melted shopping list
- 500g cream cheese, softened shopping list
- 400g can sweetened condensed milk shopping list
- 300ml thickened cream shopping list
- 3 teaspoons gelatine, dissolved in 1/4 cup boiling water shopping list
- 1/4 cup lemon juice shopping list
How to make it
- Combine biscuit crumbs and butter and press into the base of a 25cm springform pan. Refrigerate.
- Beat Cream cheese using an electric mixer until smooth. Beat in condensed milk, cream and gelatine mixture until smooth, then add lemon juice and beat until combined.
- Pour mixture into prepared base and refrigerate 3 hours or overnight.

Love this version.... its the one my mum used to make in the 70s and its my favourite! I sometimes add a can of crushed pineapple ...well drained...as well for a yummy tropical cheesecake.
