How to make it

  • Put lemon juice, garlic, salt, pepper and oregano then beat with fork until salt has dissolved.
  • Add olive oil in a thin trickle beating it in with a fork then heat skillet.
  • Slip in swordfish steaks and cook 4 minutes then turn and cook 5 minutes longer.
  • Pour lemon juice and oregano mixture over fish then turn heat to high.
  • Cook for 1 minute turning steaks once then remove from heat and add capers.
  • Transfer full contents of pan to a very warm platter and serve at once.
