Pan Grilled Swordfish Steaks With Capers Recipe
PAN GRILLED SWORDFISH STEAKS WITH CAPERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hall Estate in Forney, Texas in 1988.

Ingredients
  • 3 tablespoons fresh lemon juice
  • 4 garlic cloves lightly mashed
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons fresh oregano
  • 1/4 cup extra virgin olive oil
  • 2 pounds swordfish steaks
  • 1 tablespoon chopped capers

Directions
  1. Put lemon juice, garlic, salt, pepper and oregano then beat with fork until salt has dissolved.
  2. Add olive oil in a thin trickle beating it in with a fork then heat skillet.
  3. Slip in swordfish steaks and cook 4 minutes then turn and cook 5 minutes longer.
  4. Pour lemon juice and oregano mixture over fish then turn heat to high.
  5. Cook for 1 minute turning steaks once then remove from heat and add capers.
  6. Transfer full contents of pan to a very warm platter and serve at once.
