Apricot Preserve Cookies Recipe
APRICOT PRESERVE COOKIES This recipe came from an Estate sale. I obtained it when I purchased the family collection from the Cougar Estate in Terrell, Texas in 1984.

Ingredients
  • 1/2 cup butter
  • 1/4 cup granulated sugar
  • 1-1/2 cups flour
  • 1/2 teaspoon salt
  • 2 eggs separated
  • Apricot preserves
  • Topping:
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts

Directions
  1. Cream butter and sugar then add egg yolks, flour and salt and spread into square pan.
  2. Spread with layer of preserves.
  3. Beat egg whites until stiff then add sugar and vanilla and spread over preserves.
  4. Sprinkle with nuts and bake at 350 for 30 minutes then cut into squares and serve.
