Apricot Preserve Cookies

APRICOT PRESERVE COOKIES This recipe came from an Estate sale. I obtained it when I purchased the family collection from the Cougar Estate in Terrell, Texas in 1984.
Ingredients
- 1/2 cup butter shopping list
- 1/4 cup granulated sugar shopping list
- 1-1/2 cups flour shopping list
- 1/2 teaspoon salt shopping list
- 2 eggs separated shopping list
- apricot preserves shopping list
- Topping: shopping list
- 1/2 cup sugar shopping list
- 1 teaspoon vanilla shopping list
- 1/2 cup chopped nuts shopping list
How to make it
- Cream butter and sugar then add egg yolks, flour and salt and spread into square pan.
- Spread with layer of preserves.
- Beat egg whites until stiff then add sugar and vanilla and spread over preserves.
- Sprinkle with nuts and bake at 350 for 30 minutes then cut into squares and serve.
