TUNA LOAF This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sexton Estate in Addison, Texas in 1986.

Ingredients
  • 2 cups cooked flaked tuna
  • 1 chicken bouillon cube
  • 3/4 cup boiling water
  • 1-1/2 cups soft bread crumbs
  • 1/2 cup chopped celery
  • 1 tablespoon chopped parsley
  • 1/2 cup light cream
  • 1 teaspoon grated white onion
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons fresh lemon juice
  • 2 eggs beaten

Directions
  1. Dissolve bouillon cube in boiling water then combine all ingredients.
  2. Place in well greased loaf pan then bake at 350 for 1 hour.
