Vermicelli Soup

- 6 tablespoons cooking oil shopping list
- 4 ounces vermicelli shopping list
- 1/2 white onion quartered shopping list
- 1 clove garlic skewered on a cocktail stick shopping list
- 4 sprigs parsley shopping list
- 2 whole chilies shopping list
- 2 pints chicken stock shopping list
- 3 tablespoons tomato puree shopping list
- 2 ounces parmesan cheese shopping list
- 1 tablespoon chopped parsley shopping list
How to make it
- Heat oil in large frying pan and fry vermicelli until it is golden brown.
- Remove and drain on paper towel then discard all but 2 tablespoons of the oil.
- Fry onion and garlic until golden.
- Add reserved vermicelli, parsley, chilies, stock and puree and stir so puree is well mixed in.
- Cover and simmer 15 minutes then uncover and cook 30 minutes longer stirring occasionally.
- Sprinkle with parmesan cheese and chopped parsley.
