Turkey Hash Dated 1966 Recipe
TURKEY HASH DATED 1966 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cline Estate in Dallas, Texas in 1993.

Ingredients
  • 2 tablespoons unsalted butter
  • 1 white onion chopped
  • 2 garlic cloves minced
  • 3 cups diced cooked turkey
  • 3 cups crumbled stuffing
  • 1 cup leftover gravy
  • 3/4 cup cooked corn
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 3 eggs well beaten
  • 3/4 cup grated Parmesan cheese
  • 4 tablespoons breadcrumbs

Directions
  1. Melt butter in skillet and sauté onion and garlic until transparent stirring frequently.
  2. Add turkey and stuffing stirring to blend then add gravy, corn, parsley, salt and pepper.
  3. In small bowl combine eggs and cheese then preheat broiler.
  4. Transfer turkey mixture to casserole dish then add egg and cheese mixture.
  5. Stir to combine all ingredients then sprinkle top of hash with breadcrumbs.
  6. Place hash under broiler until breadcrumbs begin to brown about 7 minutes.
