FIVE PEPPER STRIP STEAK This recipe came from an estate sale. I obtained it when I purchased the family collection from the Tillman Estate in Forney, Texas in 1982.

Ingredients
  • 4 strip steaks
  • 2 jalapeno peppers chopped
  • 2 Serrano peppers chopped
  • 2 poblano peppers seeded and chopped
  • 2 Anaheim chile peppers seeded and chopped
  • 1/4 cup sambal chile paste
  • 3 shallots chopped roughly
  • 4 cloves garlic roughly chopped
  • 1/2 cup soy sauce
  • 1/2 cup rice wine vinegar
  • 1/4 cup honey
  • 1 bunch cilantro roughly chopped
  • 1 teaspoon freshly ground black pepper

Directions
  1. Puree all ingredients except steaks in food processor until smooth.
  2. Marinate steaks in puree for 20 minutes then set aside.
  3. Cook steaks for 5 minutes on each side then let rest 5 minutes before serving.
