Hummingbird Cake

- 1/2 small fresh pineapple, or large can pineapple shopping list
- 2 cups self raising flour shopping list
- 1 cup brown sugar shopping list
- 1/2 cup dessicated coconut shopping list
- 1/2 cup chopped walnuts shopping list
- 1 tsp mixed spice shopping list
- 2 ripe bananas shopping list
- 2 eggs shopping list
- 1 cup sunflower oil shopping list
- Frosting: shopping list
- 125g cream cheese shopping list
- 60g unsalted butter shopping list
- 1 tspn vanilla extract shopping list
- 1 1/2 cups icing sugar shopping list
- 1/2 cup walnuts, chopped shopping list
How to make it
- Preheat oven to 180degC. Grease and line base of a 22cm square cake tin.
- Peel pineapple, remove core and finely dice flesh. Need about 2 cups.
- Combine flour, sugar, coconut, walnuts and mixed spice in a large bowl. Mash bananas with a fork, and combine with eggs and oil. Stir into dry ingredients with pineapple.
- Transfer to cake tin and smooth top. Cook for 1 hour until golden and cooked when tested with a skewer. Cool for 5 mins before turing out onto a wire rack. Cool completely before icing.
- Icing: beat cream cheese, butter and vanilla together until creamy. Add icing sugar and beat until smooth. Spread over cooled cake and scatter over extra walnuts, if desired.
