Ingredients
  • 1kg maskara (pork mask)
  • 1oz sprite or 7 up
  • 5 medium sized onions
  • 3 red chillis
  • 1/12 cup of soysauce
  • 50 ml mayonnaise

Directions
  1. Boil pork mask in sprite, one onion head(chopped), 1/12 cup soy sauce, add two tbsp salt
  2. be sure to add just enogh water to cover the whole pork
  3. boil until meat is tender or about an hour
  4. drain pork
  5. start heating up the grill
  6. it is best to use a coal grill than an electronic grill
  7. grill for about 15 mins.
  8. just to add a grilling flavor on the meat. important not to burn portions of the meat
  9. chop the half of the meat into bite size strips and that would be the grilled pork mask.
  10. dip into soysauce with 2 chopped inions and red chillis and calamansi or lime
  11. for the other half
  12. cop it into very small bits. add 2 chopped onions(chopped into small bits). add 50 ml of mayonnaise.
  13. toss,
  14. it becomes sisig
  15. serve
