Lamb Haloumi Cheese And Rocket Salad

- 500g left over lamb roast shopping list
- 250g haloumi cheese shopping list
- 120g baby rocket salad leaves shopping list
- 200g cherry tomatoes shopping list
- 1/4 cup olive oil shopping list
- 2 tbspns lemon juice shopping list
- 1 tsp Moroccan seasoning shopping list
- salt and pepper shopping list
- lebanese bread shopping list
How to make it
- Slice lamb into 2cm wide strips. Place in large bowl.
- Heat a chargrill pan over medium heat. Cut haloumi cheese into 1cm thick slices. Chargrill haloumi in batches for 1 minute or until soft and heated through. Transfer to bowl with lamb.
- Add rocket and halved cherry tomatoes. Toss to combine.
- Combine olive oil, lemon juice, seasoning in a bowl. Add dressing just before serving.
- Serve with lebanese bread.
