How to make it

  • Place flour on a plate and season with salt and pepper.
  • Rinse fillets and pat dry with a paper towel.
  • Dip into seasoned flour making sure both sides are coated then shake off excess.
  • Heat olive oil in medium nonstick skillet on medium high.
  • Add fish, onion and garlic then brown 3 minutes per wide.
  • Remove to a plate and season with salt and pepper.
  • Add orange juice to skillet stirring to scrape up brown bits.
  • Lower heat to medium and return fish to skillet then cover and cook 5 minutes.
