Mexican Orange Snapper Recipe

Ingredients
  • 3 tablespoons flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound snapper fillets
  • 1 teaspoon olive oil
  • 1/2 cup chopped red onion
  • 2 garlic cloves crushed
  • 1/2 cup orange juice
  • 4 orange slices for garnish

Directions
  1. Place flour on a plate and season with salt and pepper.
  2. Rinse fillets and pat dry with a paper towel.
  3. Dip into seasoned flour making sure both sides are coated then shake off excess.
  4. Heat olive oil in medium nonstick skillet on medium high.
  5. Add fish, onion and garlic then brown 3 minutes per wide.
  6. Remove to a plate and season with salt and pepper.
  7. Add orange juice to skillet stirring to scrape up brown bits.
  8. Lower heat to medium and return fish to skillet then cover and cook 5 minutes.
