Mexican Orange Snapper

- 3 tablespoons flour shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1 pound snapper fillets shopping list
- 1 teaspoon olive oil shopping list
- 1/2 cup chopped red onion shopping list
- 2 garlic cloves crushed shopping list
- 1/2 cup orange juice shopping list
- 4 orange slices for garnish shopping list
How to make it
- Place flour on a plate and season with salt and pepper.
- Rinse fillets and pat dry with a paper towel.
- Dip into seasoned flour making sure both sides are coated then shake off excess.
- Heat olive oil in medium nonstick skillet on medium high.
- Add fish, onion and garlic then brown 3 minutes per wide.
- Remove to a plate and season with salt and pepper.
- Add orange juice to skillet stirring to scrape up brown bits.
- Lower heat to medium and return fish to skillet then cover and cook 5 minutes.
