Greek Flounder With Savory Pilaf

- 6 flounder filets shopping list
- 1 bag fresh spinach shopping list
- 3 scallions shopping list
- 1 bunch fresh dill shopping list
- 1/2 cup crumbled feta cheese shopping list
- 1/4 cup unseasoned bread crumbs shopping list
- 4 tablespoons butter shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1/4 teaspoon paprika shopping list
- 1 medium lemon shopping list
- Pilaf: shopping list
- 1 cup converted rice shopping list
- 1 cup chicken broth shopping list
- 1 cup water shopping list
- 1/4 teaspoon dried basil shopping list
- 1/4 teaspoon dried oregano shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1/2 teaspoon salt shopping list
- 3 tablespoons butter shopping list
How to make it
- Chop spinach and dill then mince scallions and sauté scallions briefly in 1 teaspoon oil.
- Add spinach and dill and cook until somewhat limp then remove from heat.
- Rinse flounder under cold water then put on cutting board and squeeze lemon juice over each.
- Place some of the greens mixture on each and a teaspoon of the feta.
- Roll each fillet and place end side down in small baking pan.
- Continue with all filets until rolls are side by side in pan snugly.
- Sprinkle rolls with breadcrumbs seasoned with parsley, salt, pepper and paprika.
- Melt butter and pour over rolls then bake 25 minutes at 325.
- For pilaf sauté raw rice in melted butter until rice starts to turn golden brown.
- Add water and broth then bring to a boil and cover and cook 20 minutes.
