Greek Flounder With Savory Pilaf Recipe
This is a recipe I obtained from a very good friend a few years back. She is notorious for her Greek cooking and this is one of the delights she served on a regular basis.

Ingredients
  • 6 flounder filets
  • 1 bag fresh spinach
  • 3 scallions
  • 1 bunch fresh dill
  • 1/2 cup crumbled Feta cheese
  • 1/4 cup unseasoned bread crumbs
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon paprika
  • 1 medium lemon
  • Pilaf:
  • 1 cup converted rice
  • 1 cup chicken broth
  • 1 cup water
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt
  • 3 tablespoons butter

Directions
  1. Chop spinach and dill then mince scallions and sauté scallions briefly in 1 teaspoon oil.
  2. Add spinach and dill and cook until somewhat limp then remove from heat.
  3. Rinse flounder under cold water then put on cutting board and squeeze lemon juice over each.
  4. Place some of the greens mixture on each and a teaspoon of the feta.
  5. Roll each fillet and place end side down in small baking pan.
  6. Continue with all filets until rolls are side by side in pan snugly.
  7. Sprinkle rolls with breadcrumbs seasoned with parsley, salt, pepper and paprika.
  8. Melt butter and pour over rolls then bake 25 minutes at 325.
  9. For pilaf sauté raw rice in melted butter until rice starts to turn golden brown.
  10. Add water and broth then bring to a boil and cover and cook 20 minutes.
