Beef Manicotti With Asparagus

- 8 manicotti noodles shopping list
- 8 ounce package frozen asparagus spears shopping list
- 8 very thin slices swiss cheese shopping list
- 8 thin slices roast beef shopping list
- 1 tablespoon olive oil shopping list
- 1/2 cup frozen chopped onion shopping list
- 2 tablespoons minced shallots shopping list
- 1 tablespoon all purpose flour shopping list
- 1 cup chicken broth shopping list
- 2 tablespoons dry sherry shopping list
- 8 ounce package sliced fresh mushrooms shopping list
- 2 tablespoons finely chopped fresh flat leaf parsley shopping list
How to make it
- Preheat oven to 350 then coat baking dish with cooking spray.
- Cook manicotti according to package directions then drain well and rinse under cold water.
- Arrange in single layer on a plate.
- Place asparagus in glass dish then cover and microwave 5 minutes then drain and pat dry.
- Place a slice of beef on top of each slice of cheese.
- Place 3 asparagus spears tip to end along one side of each beef then roll up tightly.
- Insert rolls into manicotti and arrange in prepared baking dish.
- In large skillet heat oil over medium high heat then add onion and shallots and cook 5 minutes.
- Add flour and stir until blended then add broth and sherry and stir until sauce comes to a boil.
- Reduce heat and simmer until sauce thickens then add mushrooms and parsley.
- Simmer 5 minutes longer then pour sauce over manicotti.
- Cover and bake 20 minutes then uncover and bake 10 minutes longer.
