Banana Apple Low Fat Muffins

- 1/2 cup wheat germ shopping list
- 2 cups whole wheat flour, sifted shopping list
- 1 tsp baking soda shopping list
- 2 tbsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1/2 cup pecan pieces shopping list
- 1 tsp cinnamon powder shopping list
- 1/4 cup ground flax seeds shopping list
- 1/2 cup sugar (natural cane sugar is better) shopping list
- 2 cups bananas, mashed or 3 medium size bananas shopping list
- 3 medium size eggs shopping list
- 1 tsp pure vanilla extract shopping list
- 1/2 cup apple sauce (no sugar added) shopping list
How to make it
- Preheat oven to 350 degrees F. Grease muffin pan and line with paper liners. In large bowl, combine all the dry ingredients except the pecan pieces. In a large separate bowl combine all the wet ingredients. Blend well. Slowly combine the dry ingredients to the wet ingredients a little at a time, blending well between additions. When both have been mixed, add the pecan pieces and mix into the batter.
- Scoop batter into muffin cups. Bake 25-30 minutes or until a toothpick inserted in the muffin comes out clean. Let cool before serving.

- Makes 18 medium size muffins.
