Spanish Potatoes

- 2-1/2 pounds potatoes sliced into bite size pieces shopping list
- 8 ounces lean bacon shopping list
- 10 ounces frozen diced sweet peppers shopping list
- 15 ounce can crushed tomatoes shopping list
- 1/2 cup chopped green olives with pimiento shopping list
- 1/4 teaspoon garlic powder shopping list
- 1/2 teaspoon onion powder shopping list
- 2 tablespoons chili powder shopping list
- 2 cups water shopping list
- 2 tablespoons chopped capers shopping list
- Additional capers for garnish shopping list
How to make it
- In large heavy skillet cook bacon until well done and crisp then remove from skillet.
- Drain on paper towel then crumble and reserve.
- Pour off drippings and add peppers to skillet then cook 5 minutes.
- Add tomatoes, olives, powders, water and potatoes.
- Bring to boiling and cook uncovered stirring occasionally for 20 minutes.
- Stir in capers then allow to stand 5 minutes and stir in crumbled bacon.
- Add additional capers if desired.
