Banana Crunch Cake

- 1/2 cup all purpose flour shopping list
- 1 cup flaked coconut shopping list
- 1 cup rolled oats shopping list
- 3/4 cup firmly packed brown sugar shopping list
- 1/2 cup chopped pecans shopping list
- 1/2 cup butter shopping list
- 1-1/2 cups sliced very ripe bananas shopping list
- 1/2 cup sour cream shopping list
- 4 eggs shopping list
- 1 package yellow cake mix with pudding shopping list
How to make it
- Preheat oven to 350 then grease and flour tube pan.
- In medium bowl combine flour, coconut, oats, brown sugar and pecans then mix well.
- Cut in butter with fork or pastry blender until mixture is crumbly then set aside.
- Combine bananas, sour cream and eggs then beat at low speed until smooth.
- Add cake mix then beat 2 minutes at high speed.
- Spread 1/3 of the batter in greased and floured pan then sprinkle with 1/3 of the coconut mixture.
- Repeat layers 2 more times using remaining batter and coconut mixture.
- End with coconut mixture then bake for 55 minutes.
- Cool upright in pan 15 minutes then remove from pan and place on plate coconut side up.
- Cool 1 hour then serve.
