Here is a great dish for those dinner's for two.

Ingredients
  • 1/3 cup Bisquick mix
  • 1 tablespoon water
  • 1 egg white
  • 1/2 cup cut-up cooked chicken breast
  • 1/4 cup barbecue sauce
  • 1/4 cup shredded reduced-fat Cheddar cheese (1 oz)

Directions
  1. Heat oven to 400°F. Spray 8x4-inch loaf pan with cooking spray.
  2. In small bowl, stir together Bisquick mix, water and egg white; spread in bottom of pan.
  3. In small microwavable bowl, mix chicken and barbecue sauce. Microwave on High 1 minute; stir. Spoon over batter in pan to within 1/2 inch of edges; sprinkle with cheese.
  4. Bake 20 to 23 minutes or until golden brown; loosen from side of pan.
