Vegan Banana Walnut Muffins With Brown Sugar Cinnamon Topping Recipe
This is a combination of two recipes that I absolutely love. These muffins are so moist and delicious!

Ingredients
  • Flour, whole wheat, 1.5 cup
  • Granulated Sugar, 3/4 cup
  • 1 1/2 tsp Ener-G Egg Replacer + 2 Tablespoons warm water (equals one egg)
  • Banana, fresh, 3 large
  • Baking Powder, 1 tsp
  • Baking Soda, 1 tsp
  • Salt, 1/2 tsp
  • Vanilla Extract, 1 tsp
  • Cinnamon, ground, 1 tsp
  • Walnuts, 1/2 cup, chopped
  • Butter, unsalted, 1/3 cup
  • Topping:
  • 1/2 cup brown sugar
  • 1/4 cup whole wheat flour
  • 3 TB vegan buttery spread
  • 1.5 tsp cinnamon

Directions
  1. Sift together flour, baking soda, baking powder, and salt and set aside.
  2. Mix together 3 mashed bananas, 1/3cup melted butter, Egg Replacer + the 2 Tablespoons warm water (equals one egg), and 3/4cup sugar. Then stir in vanilla extract and cinnamon.
  3. Add the liquid to the flour mixture.
  4. Fold in walnuts.
  5. Pour into 12 muffin tins with baking liners
  6. In a small bowl, make topping mixture.
  7. Combine sugar, flour, butter, and cinnamon. Cut together into you get a crumbly consistency. Divide and sprinkle evenly over 12 muffins.
  8. Bake at 350 degrees for 10-15 minutes.
  9. Number of Servings: 12
