Bacon broth

- 1 pack rough cut back bacon (smoked is fine, just use less salt later) shopping list
- 1 good sized onion chopped shopping list
- 2-3 carrots finely chopped shopping list
- 1 handful left over chicken (cooked) shopping list
- 1 cup lentils (red) soak and rinse as per instructions shopping list
- 1.5 litre chicken stock/broth shopping list
- salt and pepper to taste shopping list
How to make it
- heat bacon in soup pot on med/high heat for 5 mins.
- add onion and carrots to soften.
- when bacon fat starts to golden add stock, lentils and chicken.
- leave to simmer for 10min, do not stir.
- sift the scum with spoon if need be then allow to cool before blending.
- bring back to the heat, add salt and pepper to taste.
