Quick Vegetable Lo Mein Recipe
This is a great recipe that I obtained from a friend who has international dinner parties. This was one of her most popular dishes when she did oriental night. Enjoy

Ingredients
  • 12 ounces uncooked fettuccine
  • 4 green onions sliced
  • 2 garlic cloves minced
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 cups sliced fresh mushrooms
  • 2 tablespoons minced fresh cilantro
  • 3 tablespoons soy sauce
  • 1 cup condensed chicken broth
  • 1 teaspoon cornstarch

Directions
  1. Cook fettuccine according to package directions then drain and keep warm.
  2. Heat oil over medium heat then sauté onions and garlic until tender.
  3. Add ginger and mushrooms then sauté 2 minutes and stir in cilantro and fettuccine.
  4. Whisk together soy sauce, broth and cornstarch until smooth.
  5. Pour over fettuccine mixture then bring to a boil stirring often just until thickened.
