How to make it

  • Peel core and slice pears in wedges then combine pears, oranges, cantaloupe and grapes.
  • Drain apricots and puree until smooth in blender or food processor.
  • Combine apricots puree with sugar and heat until sugar dissolves then add juice and chill.
  • Pour over fruit and toss lightly to coat then serve chilled in compotes.
