Crab and Smoked Salmon Ravioli

- 3 ounces skinless smoked salmon fillet shopping list
- 3 tablespoons chilled whipping cream shopping list
- 1 tablespoon egg white shopping list
- 4 ounces fresh crabmeat shopping list
- 1 green onion chopped shopping list
- 1/2 celery stalk finely diced shopping list
- 2 teaspoons chopped fresh cilantro shopping list
- 1-1/2 teaspoons fresh lemon juice shopping list
- 1/8 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 32 potsticker wrappers shopping list
- Vinaigrette: shopping list
- 1 cup olive oil shopping list
- 1/4 cup white wine vinegar shopping list
- 1/4 cup fresh lemon juice shopping list
- 2 tomatoes peeled seeded and diced shopping list
- 3 ounces snow peas cut into strips shopping list
- 1 celery stalk cut into strips shopping list
- 3 tablespoons minced fresh chives shopping list
How to make it
- Remove any bones from salmon then chop coarsely and transfer to food processor.
- Add cream and egg white then puree and transfer to boil.
- Mix in crab, onion, celery, cilantro, lemon juice, salt and pepper.
- Place 1 wrapper on work surface and put 1 level tablespoon filling in center.
- Brush edges with water then cover with another wrapper and press firmly to seal.
- Transfer to prepared sheet then repeat with remaining wrappers and filling.
- Cover with plastic and chill then bring large saucepan of water to a boil.
- Add wrappers in batches and cook until tender about 3 minutes per batch.
- Using slotted spoon transfer wrappers to another baking sheet then cover with foil.
- Combine oil, vinegar and lemon juice in large skillet then stir over medium heat until warm.
- Add tomatoes, snow peas and celery then stir just until heated through about 2 minutes.
- Add chives then divide mixture among plates and place ravioli on top of vinaigrette.
