Fish Normandy Recipe
FISH NORMANDY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pryor Estate in Grapevine, Texas in 1996.

Ingredients
  • 1-1/2 pound lean fish fillets
  • 3 medium onions finely chopped
  • 1 cup water
  • 1 cup dry white wine
  • 3 tablespoons butter at room temperature
  • 2-1/2 tablespoons flour
  • 1/4 cup chopped parsley
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Chopped scallions

Directions
  1. Preheat oven to 350 then place fish in a baking dish and add onions, water and wine.
  2. Cover and bake 15 minutes then remove from dish and place on a warm latter.
  3. Strain stock then combine butter and flour in a small sauce and stir in 1 cup stock.
  4. Add parsley, salt and pepper the cook stirring constantly until smooth and thickened.
  5. Pour sauce over fish and sprinkle with chopped scallions.
