How to make it

  • Spray small saute pan with PAM and heat.
  • Saute sliced mushrooms for a minute or so, then add caraway bell peppers and spinach.
  • Continue sauting until spinach is fully wilted.
  • Pour in egg to cover vegetables and top with provolone.
  • Reduce heat and let simmer until egg is fully cooked.
  • Servings 1
