Spinach and Pepper Fritata

- 1 cup spinach, fresh chopped shopping list
- 1/4 cup peppers.html">Sauteed Caraway Bell peppers shopping list
- 1/4 c sliced mushrooms shopping list
- 1/2 cup egg substitute (or 2 eggs beaten) shopping list
- 1 slice provolone shopping list
How to make it
- Spray small saute pan with PAM and heat.
- Saute sliced mushrooms for a minute or so, then add caraway bell peppers and spinach.
- Continue sauting until spinach is fully wilted.
- Pour in egg to cover vegetables and top with provolone.
- Reduce heat and let simmer until egg is fully cooked.
- Servings 1
