Glazed Pork Medallions Recipe

Ingredients
  • 3/4 pound pork tenderloin
  • 2 tablespoons real maple syrup
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon olive oil

Directions
  1. Remove fat from pork and cut into 1” slices.
  2. Place slices between 2 pieces of plastic wrap and flatten to 1/2".
  3. Whisk maple syrup, balsamic vinegar and mustard together.
  4. Heat olive oil in nonstick skillet on high then brown pork medallions for two minutes.
  5. Turn and brown the second side two minutes.
  6. Reduce heat to low then pour maple syrup mixture over pork and cover and cook two minutes.
