How to make it

  • Remove fat from pork and cut into 1” slices.
  • Place slices between 2 pieces of plastic wrap and flatten to 1/2".
  • Whisk maple syrup, balsamic vinegar and mustard together.
  • Heat olive oil in nonstick skillet on high then brown pork medallions for two minutes.
  • Turn and brown the second side two minutes.
  • Reduce heat to low then pour maple syrup mixture over pork and cover and cook two minutes.
