How to make it
- Remove fat from pork and cut into 1” slices.
- Place slices between 2 pieces of plastic wrap and flatten to 1/2".
- Whisk maple syrup, balsamic vinegar and mustard together.
- Heat olive oil in nonstick skillet on high then brown pork medallions for two minutes.
- Turn and brown the second side two minutes.
- Reduce heat to low then pour maple syrup mixture over pork and cover and cook two minutes.
