Banana Split Cake Recipe
I am not allowed to show up at any family gathering without this dessert. It's a summertime dessert but I make it year round, especially at Christmas.

Ingredients
  • 3 cups graham cracker crumbs
  • 1 stick butter-melted
  • 1 pound confectioners' sugar-divided
  • 2 8oz packages cream cheese-softened
  • 2 20oz cans crushed pineapple-drained
  • 5-6 large bananas-sliced
  • 2-3 tablespoons lemon juice
  • 1 16oz tub whipped topping-thawed
  • 1 jar marachino cherries-drained and whole with no pits
  • 1 cup chopped pecans- optional

Directions
  1. In a medium mixing bowl, combine graham cracker crumbs, butter, and 2 tablespoon confectioners sugar.
  2. Stir together until mixture is crumbly and holds together when pressed.
  3. Press mixture into a deep 9" x 13" pan. Refrigerate or freeze for 20 minutes.
  4. In a large mixing bowl, combine cream cheese and remaining sugar. Beat on medium high speed until smooth and creamy.
  5. Spread cream cheese mixture over graham cracker crust.
  6. Place banana slices into a medium mixing bowl. Add lemon juice and toss to coat.
  7. Place bananas in an even layer over cream cheese mixture.
  8. Spread pineapple over bananas.
  9. Spread whipped topping over pineapple.
  10. Garnish with cherries and pecans(if using)
  11. Cover loosely and chill overnight.
  12. Dessert can be cut into squares or spooned out of pan.
  13. The older it gets, the better it tastes so don't worry if the bananas turn a little brown.
  14. Suggestion(s):
  15. Garnish with any fruit you like. When in season, add a layer of fresh sliced strawberries or peaches on top of (or instead of) pineapple layer.
  16. Save pineapple juice for another use. It makes great fruit punch.

This sounds really yummy using fresh peaches or strawberries as I am not a canned pineapple fan. I will be bringing this to our family gathering right after Labor Day. Thanks for sharing.
