How to make it

  • In a medium mixing bowl, combine graham cracker crumbs, butter, and 2 tablespoon confectioners sugar.
  • Stir together until mixture is crumbly and holds together when pressed.
  • Press mixture into a deep 9" x 13" pan. Refrigerate or freeze for 20 minutes.
  • In a large mixing bowl, combine cream cheese and remaining sugar. Beat on medium high speed until smooth and creamy.
  • Spread cream cheese mixture over graham cracker crust.
  • Place banana slices into a medium mixing bowl. Add lemon juice and toss to coat.
  • Place bananas in an even layer over cream cheese mixture.
  • Spread pineapple over bananas.
  • Spread whipped topping over pineapple.
  • Garnish with cherries and pecans(if using)
  • Cover loosely and chill overnight.
  • Dessert can be cut into squares or spooned out of pan.
  • The older it gets, the better it tastes so don't worry if the bananas turn a little brown.
  • Suggestion(s):
  • Garnish with any fruit you like. When in season, add a layer of fresh sliced strawberries or peaches on top of (or instead of) pineapple layer.
  • Save pineapple juice for another use. It makes great fruit punch.

    This sounds really yummy using fresh peaches or strawberries as I am not a canned pineapple fan. I will be bringing this to our family gathering right after Labor Day. Thanks for sharing.
