Another old time favorite. My Nan always had this on hand in the pantry. Usually beside the old fashioned Molasses cookies. The cranberries in the middle soak gently into the cake layers just enough to give it a nice tart flavor. Read more Just right with a cup of tea. See less
Ingredients
- 1 1/2 cup flour shopping list
- 2 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1/3 cup butter shopping list
- 1 tsp vanilla extract shopping list
- 3/4 cup sugar shopping list
- 2 eggs shopping list
- /2 cup milk shopping list
- Filling shopping list
- Whole cranberry sauce or Cranberry compote shopping list
- vanilla frosting Optional or confectioners sugar shopping list
How to make it
- Preheat Oven 375*
- Grease two 8" round cake Pans set aside
- Sift together Flour, Salt, and Baking Powder set aside
- Cream Butter and sugar beating until light and fluffy beat in vanilla until smooth
- Beat in eggs one at a time beating hard after each addition
- Add flour mixture alternately to creamed mixture with Milk starting with flour and ending with flour.
- pour into pans bake about 25 minutes until done cake starts to pull away from sides of pan
- cool completely on wire rack
- on top of one cake spread filling top with second cake.
- sprinkle with confectioners sugar or frost top with vanilla frosting
