Brown Sugar Oatmeal Cranberry Muffins Recipe
BROWN SUGAR OATMEAL CRANBERRY MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stolley Estate in Wills Point, Texas in 1982.

Ingredients
  • 1-3/4 cups rolled oats
  • 1/4 cup butter melted
  • 1 cup all purpose flour
  • 1 cup buttermilk
  • 1/4 cup packed brown sugar
  • 1/4 cup honey
  • 2 teaspoons baking powder
  • 1 cup dried cranberries
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg

Directions
  1. Preheat oven to 350 then coat 12 cup muffin pan with cooking spray.
  2. Thoroughly mix oatmeal, flour, brown sugar, baking powder, baking soda and salt in large bowl.
  3. Whisk egg, butter, buttermilk and honey until well blended then stir in cranberries.
  4. Pour liquid mixture over dry ingredients and fold in with rubber spatula just until combined.
  5. Be careful not to over mix then spoon batter into prepared muffin cups dividing evenly.
  6. Bake 20 minutes or until golden then turn out onto rack and serve warm or at room temperature.
