Solo Shrimp Casseroles Recipe
SOLO SHRIMP CASSEROLES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Benson Estate in Canton, Texas in 1987.

Ingredients
  • 2/3 cup white onion chopped
  • 1/4 cup bell pepper chopped
  • 1/2 cup butter
  • 3 tablespoons flour
  • 5-1/3 ounces evaporated milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups baby shrimp cooked
  • 1/4 cup parsley chopped
  • 1/2 cup grated cheddar cheese
  • 2 tablespoons paprika

Directions
  1. Sauté onion and bell pepper in butter then slowly stir in flour stirring constantly.
  2. Slowly stir in evaporated milk stirring constantly then add salt, pepper, shrimp and parsley.
  3. Pour into individual casserole dishes which have been sprayed with nonstick cooking spray.
  4. Sprinkle cheese and paprika over top of each casserole then bake at 350 for 20 minutes.
