Spinach Soup

- 4 tablespoons butter shopping list
- 1/4 cup finely chopped white onion shopping list
- 2 pounds fresh spinach washed drained and chopped shopping list
- 4 cups chicken broth shopping list
- 1/8 teaspoon nutmeg shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1/2 cup heavy cream shopping list
How to make it
- Heat butter in a large pot over moderate heat and sauté onion until light golden brown.
- Add spinach and stir until spinach is just tender about 5 minutes.
- Transfer spinach mixture and a little of the stock to a blender and process until smooth.
- Return spinach mixture to pot and add remaining stock.
- Season with nutmeg, salt and pepper then bring to a simmer.
- Stir in cream right before serving.
