Spinach Soup Recipe
SPINACH SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Harrison Estate in Crandall, Texas in 1999.

Ingredients
  • 4 tablespoons butter
  • 1/4 cup finely chopped white onion
  • 2 pounds fresh spinach washed drained and chopped
  • 4 cups chicken broth
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup heavy cream

Directions
  1. Heat butter in a large pot over moderate heat and sauté onion until light golden brown.
  2. Add spinach and stir until spinach is just tender about 5 minutes.
  3. Transfer spinach mixture and a little of the stock to a blender and process until smooth.
  4. Return spinach mixture to pot and add remaining stock.
  5. Season with nutmeg, salt and pepper then bring to a simmer.
  6. Stir in cream right before serving.
