How to make it

  • Combine carrots and water in a large saucepan then season with salt.
  • Cover and boil until carrots are crisp tender about 7 minutes then drain off any excess water.
  • Transfer carrots to a large shallow bowl and mix in lemon juice, oil, cumin and garlic.
  • Season with salt and pepper then cool and add cilantro.
