Cilantro Carrots With Cumin

- 2 pounds carrots cut into 2” long pieces then quartered shopping list
- 6 tablespoons water shopping list
- 3 tablespoons fresh lemon juice shopping list
- 3 tablespoons olive oil shopping list
- 2 tablespoons ground cumin shopping list
- 2 garlic cloves pressed shopping list
- 2 tablespoons minced fresh cilantro shopping list
How to make it
- Combine carrots and water in a large saucepan then season with salt.
- Cover and boil until carrots are crisp tender about 7 minutes then drain off any excess water.
- Transfer carrots to a large shallow bowl and mix in lemon juice, oil, cumin and garlic.
- Season with salt and pepper then cool and add cilantro.
