Baked Eggs With Cheese And Basil Sauce Recipe
BAKED EGGS WITH CHEESE AND BASIL SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Malta Estate in Bedford, Texas in 1991.

Ingredients
  • 3 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 cup snipped fresh basil
  • 1 cup milk
  • Nonstick spray coating
  • 4 eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 ounce white cheddar cheese
  • Snipped fresh basil for garnish

Directions
  1. Preheat oven to 350.
  2. In small saucepan melt butter then stir in flour, salt, pepper and dried basil.
  3. Add milk all at once then cook and stir over medium heat until thickened and bubbly.
  4. Cook and stir 1 minute more then remove from heat and stir in fresh basil.
  5. Spray four individual baking dishes with nonstick coating.
  6. Spoon 2 tablespoons basil sauce into each dish then break an egg into center of each dish.
  7. Season with salt and pepper then spoon remaining sauce over eggs and bake 20 minutes.
  8. Sprinkle with cheese and let stand until cheese melts then garnish with basil and serve.
