Super Easy Shrimp Souffle Recipe
This is one souffle that will not fall. It can be served for lunch, a lightl supper, brunch or even a first course. Flaked crabmeat can be used in place of shrimp.

Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup all-purpose flour
  • 2 teaspoons curry powder dissolved in 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup half and half
  • 1 pound tiny cooked shrimp
  • 4 egg whites

Directions
  1. Preheat oven to 350 degrees.
  2. Generously butter a 1 1/2 quart souffle dish or straight sided casserole.
  3. Mix together mayonnaise, flour, dissolved curry powder, salt and pepper.
  4. Whisk in half and half.
  5. Stir in shrimp.
  6. Using an electric mixer, beat egg whites until stiff.
  7. Gently fold into shrimp mixture.
  8. Pour into prepared pan.
  9. Bake 45 to 60 minutes or until puffed and golden brown.
  10. Serve immediately.
