SHRIMP DIANE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pittman Estate in Hurst, Texas in 1993.

Ingredients
  • 1/2 cup sliced mushrooms
  • 2 tablespoons minced shallots
  • 1 tablespoon margarine
  • 1/4 cup dry white wine
  • 15-1/2 ounces artichoke hearts drained and quartered
  • 1/4 cup chopped chives
  • 1/4 cup chopped pimiento
  • 16 ounces peeled deveined shrimp
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Chopped parsley for garnish

Directions
  1. Melt butter in skillet then sauté mushrooms and shallots for 5 minutes.
  2. Stir in wine, artichoke hearts, chives and pimiento.
  3. Stir in shrimp and simmer covered for 5 minutes then season with salt and pepper.
  4. Sprinkle with parsley then serve immediately.
