How to make it

  • Rinse beans well then cover with water and soak overnight then drain well.
  • Place beans, onion, celery, carrot, garlic, bay leaf, parsley, thyme, salt, and pepper in a large pot.
  • Cover with 3 cups water then bring to a boil and simmer 1 hour.
  • Preheat oven to 325 then transfer beans and liquid to casserole dish sprayed with nonstick spray.
  • Stir in margarine and rum then cover and bake 2 hours.
  • Remove cover and bake 30 minutes longer then serve topped with orange wedges.
