Ingredients

2 Tbsp olive oil

6 chicken breasts, skinless, boneless, and each cut in half

Salt and pepper to taste

1 red onion, chopped

1 green bell pepper, julienned

1 tbsp orange liqueur

1 Tbsp fresh ginger, grated fine or minced

1 cup half-n-half cream

1/3 cup mango chutney

2 Tbsp Dijon mustard

1 Tbsp balsamic vinegar

1/4 cup cashews (lightly toasted if possible to bring out the flavour)

Directions

Lightly sprinkle chicken with salt and pepper and brown in olive oil in a large skillet. When thoroughly cooked, transfer chicken and pan juices to an ovenproof container; cover with foil and hold in warm oven.

In same skillet, cook onion, green pepper, ginger, orange liqueur and garlic, stirring constantly, for about 2 minutes (add a touch of oil if necessary). Add cream, chutney, mustard and balsamic. Bring mixture to a boil and simmer until thickened.

Reduce heat and add chicken; stir and heat to rewarm about 5 minutes. Add cashews.

Serve over rice.
