Sole with Parsley and Mint

- 1 pound sole shopping list
- 2 tablespoons minced fresh parsley shopping list
- 1 tablespoon chopped fresh mint shopping list
- 2 teaspoons vegetable oil shopping list
- 1 medium clove garlic chopped shopping list
- 1 teaspoon margarine shopping list
- 1 green onion chopped shopping list
- 1/2 cup dry white wine shopping list
- 1/4 cup water shopping list
- 1/4 teaspoon white pepper shopping list
How to make it
- Preheat broiler then lightly spray a broiler pan and rack with vegetable oil spray.
- Rinse fish and pat dry with paper towels then put fish on rack.
- Combine parsley, mint, oil and garlic then rub mixture on fish.
- Broil 4” from heat 8 minutes.
- Melt margarine in nonstick skillet over medium high heat then sauté onion 2 minutes.
- Add juices from fish and remaining sauce ingredients then heat thoroughly and pour over fish.
