Sole With Parsley And Mint Recipe
SOLE WITH PARSLEY AND MINT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pittman Estate in Hurst, Texas in 1993.

Ingredients
  • 1 pound sole
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon chopped fresh mint
  • 2 teaspoons vegetable oil
  • 1 medium clove garlic chopped
  • 1 teaspoon margarine
  • 1 green onion chopped
  • 1/2 cup dry white wine
  • 1/4 cup water
  • 1/4 teaspoon white pepper

Directions
  1. Preheat broiler then lightly spray a broiler pan and rack with vegetable oil spray.
  2. Rinse fish and pat dry with paper towels then put fish on rack.
  3. Combine parsley, mint, oil and garlic then rub mixture on fish.
  4. Broil 4” from heat 8 minutes.
  5. Melt margarine in nonstick skillet over medium high heat then sauté onion 2 minutes.
  6. Add juices from fish and remaining sauce ingredients then heat thoroughly and pour over fish.
