SPEEDY CHICKEN AND RAVIOLI This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pittman Estate in Hurst, Texas in 1993.

Ingredients
  • Vegetable cooking spray
  • 1 pound chicken tenders cut into 1/2" pieces
  • 3/4 cup chopped white onion
  • 2 teaspoons minced garlic
  • 3/4 cup canned kidney beans rinsed and drained
  • 1 large tomato cubed
  • 1/2 teaspoon dried thyme leaves
  • 9 ounces fresh sun dried tomato ravioli cooked
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Spray large skillet with cooking spray then heat over medium heat until hot.
  2. Cook chicken, onion and garlic until browned about 8 minutes.
  3. Stir in beans, tomato and thyme then cook 3 minutes and stir in ravioli.
  4. Cook 2 minutes more and season with salt and pepper then serve immediately.
