How to make it

  • Stir first 6 ingredients together in large bowl, make a well in the center
  • Whisk applesauce ,oil, egg, buttermilk,vanilla and maple flavoring together in small bowl. stir in dates . Pour into well of dry ingredients . Stir just untill moistened . Makes 12 muffins. bake 375 20 minutes .

    I think there is something missing from this recipe. I followed the directions exactly, and I got an unbelievably thick pastey dough. They didn't rise AT ALL and I got really dense unflavorful muffins. I suggest merge between this recipe and this one:

    I think maybe there is too much flour in this recipe, as well as no baking soda, and there must be something to combining the bran with buttermilk and letting it stand. maybe that would give them the fluff they need.
    Don't make this recipe without altering it somehow.
