Quinoa Salad Southwest Style

- 1 C cooked quinoa shopping list
- 1 can black beans drained shopping list
- 1 C Sweet frozen corn thawed and drained (use fresh roasted if available) shopping list
- 1 can Rotel tomatoes Extra Hot reserve juice shopping list
- 2 jalapenos diced shopping list
- 1/2 C red onion chopped shopping list
- 1 yellow bell pepper chopped shopping list
- 1 avacado chopped sprinkled with fresh lime juice shopping list
- 2 T fresh cilantro minced shopping list
- 2 cloves garlic minced shopping list
- 2 limes shopping list
- 2 T olive oil light tasting shopping list
- 1/2 t coriander shopping list
- sea salt and fresh ground pepper to taste shopping list
How to make it
- Mix first four ingredients in air tight container
- Add chopped veggies
- Mix oil, juice of limes, 3 T reserved tomatoe juice, coriander, garlic, salt and pepper to taste.
- Add to salad
- Chill
- Doesnt keep too well because of the avacado so eat it up
