Sweet and Spicy Shrimp

- 1/2 cup water shopping list
- 1/4 cup packed light brown sugar shopping list
- 1/4 cup Thai fish sauce shopping list
- 2 cloves garlic finely chopped shopping list
- 2 tablespoons finely chopped cilantro shopping list
- 1 tablespoon white peppercorns crushed shopping list
- 1 pound large shrimp in their shells shopping list
- cilantro sprigs for garnish shopping list
How to make it
- Combine water, sugar and fish sauce in a large saucepan and bring to simmer over low heat.
- Stir constantly until sugar dissolves then add garlic, cilantro and peppercorns and bring to a boil.
- Cook over moderate heat until boiling then cook until sauce is slightly thickened.
- Add shrimp and cook stirring constantly until shrimp are opaque and just cooked through.
- Remove from heat and cool to room temperature then chill 1 hour.
- Toss shrimp in sauce often then drain with a slotted spoon and serve garnished with cilantro.
