How to make it

  • Combine water, sugar and fish sauce in a large saucepan and bring to simmer over low heat.
  • Stir constantly until sugar dissolves then add garlic, cilantro and peppercorns and bring to a boil.
  • Cook over moderate heat until boiling then cook until sauce is slightly thickened.
  • Add shrimp and cook stirring constantly until shrimp are opaque and just cooked through.
  • Remove from heat and cool to room temperature then chill 1 hour.
  • Toss shrimp in sauce often then drain with a slotted spoon and serve garnished with cilantro.
